9 Steps to save money at the project stage in the food business/cloud kitchen.

  • Start with a detailed plan

Some people sign up the place out of enthusiasm but didn’t think of other things and it will only delay the implementation of the project and hence increase the cost as well. So only start the project, once it’s on the paper.

  • Stick to the schedule.

For ex- In cloud kitchen, you should complete your project in 20–30 days at maximum, otherwise, you haven't planned well. You can use tools like the GANTT chart, Trello, Google Calendar or any other PM tools.

  • Buying used equipment can save you a lot of money ( cost can be as low as 25%–30%). You can buy it from the restaurants which are shutting their operations etc.

Ex- Tables, Kitchen ranges, Racks, etc.

Avoid instruments like mixer, grinder, ovens, fridges, etc. which have a smaller life span of 2–3 years will not fit in this category.

In extreme cases, if you have to buy racks, tables, and ranges, mid-range is OK.

  • Take over an existing kitchen or restaurant. (40–50% price range)
  • Whatever you buy, like equipment or so, take at least three competitive quotes from the market.
  • Negotiate the rent-free period with the owner.

Like most owners do agree for some rent-free period.

Why you need it? Because you will not start immediately, you will take some time to do up the place and it will help you save some bucks.

  • Try to keep the rental deposit minimum.

It varies from city to city. In Bangalore, it may be around 8–9 months rental deposit. Try to minimize it as much as possible.

  • Tie up with the aggregators (delivery partners, etc. ) early on as soon as you have your basic infrastructure and have an FMCG certificate ready with you. As aggregator will take time to onboard once you finalize them after the trials. The onboarding time varies from aggregator to aggregator but ideally, you can have them in around 15 -20 days.
  • Knowing where to cut costs and where to spend more.

For ex-

1. You can have GI Exhaust against Stainless Steel in Kitchen exhausts.

2. You can save on tiling in the kitchens (by doing it, half the wall height) which is helpful in keeping the kitchen clean. You can also use oil paints too.
